I used water sugar and a packet of yeast and let it ferment for 2 weeks. I used a brita filter to filter it. I did not distill it. Is it safe for me do drink this? Has anyone else drank something like this before?

Series: Chlorinated water may cause candida – Part 6 of 6
If you are on city water it is very possible that the water you use in your household in chlorinated. If you aren’t filtering your water to remove chlorine, you should go right out and get a Brita filter or some other filtering device. The Chlorine chemical is a halogen and in gas form it can literally kill you – having this is your drinking water isn’t a good idea.
The reason that chlorine is added to city water is to disinfect the water supply by killing bacteria that are present in the water. Doesn’t it make sense that if chlorine kills bacteria in water, it will also kill bacteria in the digestive tract. Unfortunately, most of the bacteria in the digestive tract are beneficial bacteria that are absolutely essential in helping our digestive system to work well. Without these bacteria (probiotics), your digestive system will start to have problems. Without these bacteria, you may be constipated, bloated, in pain; and, without these bacteria your intestinal tract is vulnerable to candida overgrowth.

Being an overwhelmed neophyte, I am having enormous trouble getting my sourdough starters to make the transition to the big leagues: basically, to move from being a starter in a mason jar to being a leavening agent for loaves of bread. I have had success in “giving birth” to the starters, but can’t seem to get them to robustly participate in the final process of making bread . . . things seem to go OK until my little yeast/bacteria colonies are asked to rise in either the fermentation stage or in the proofing stage.
(Please excuse the length here, but I figured you’d all want the details of what I was doing, so you could be better detectives).
I am mostly using methods from Daniel Leader’s “Bread Alone”, combined with lots of stuff from various blogs, all for the goal of making versions of No-Knead Sourdough Bread (I guess I’ll move to kneading, and other traditional methods, next?).
