I was researching for an experiment, where we are measuring sulfite levels in drinking water. The World Health Organization states:
"The presence of sulfate in drinking-water can cause noticeable taste, and very high levels might cause a laxative effect in unaccustomed consumers. Taste impairment varies with the nature of the associated cation; taste thresholds have been found to range from 250mg/litre for sodium sulfate to 1000 mg/litre for calcium sulfate. It is generally considered that taste impairment is minimal at levels below 250 mg/litre. No health-based guideline value has been derived for sulfate "

They do not state the effects of sulfite in drinking water. I was wondering in which ways the effects of sulfite would differ from the effects of sulphate.
There is another effect which no one has mentioned. First of all sulfite usually in the form of sodium but possibly also potassium or other monovalent cation with cause the water to smell and taste funny if in high enough concentration. A sharp almost acid smell. Secondly the presence of silfutes will affect the microbiology of the water. Wine makers sometimes add sulfites to wine to kill wild yeast.
