Your thermal cut of is a high temerature limit switch that cuts off the heat from the tank when the high temperature has been reached.
Hot Water: Virtually unlimited and fast with natural gas. Because gas flames provide instant heat, a high-efficiency gas water heater heats more ...
We currently have a coil that heats our water...and we take short showers and the kids get half a bath. We were considering adding a tankless hot water heater such as "instant hot" to our gas or a water tank like "super stor ultra" to our oil burner. I'm wondering if a product like instant hot will really give an endless hot shower and fill the tub too. I'd appreciate feedback/experience with this.
I don't think instant hot is the best answer. I'm not sure that will supply the quantity you need. Tankless water heaters can do the job, though. They're like the Bosch AquaStar series. They totally replace your water heater. You can split your water service off to two lines and have two tankless water heaters, if you want. These draw a lot of gas and might require increasing the size of your gas service. A major advantage, though, is that they don't store hot water, so they don't waste gas keeping a large amount of water hot all day and all night.
Also...look for the ones that meet the level of efficiency required for a tax credit. I believe the credit is $300. That's not just an income deduction...it's actually a credit. The Bosch AquaStar at the link below doesn't meet the efficiency requirements, but I got one at Home Depot for under $400, so I decided against trying for the tax credit.

Point-of-use 4-gallon mini-tank water heater
is it wise to hook a solar water storage tank to an on-demand water propane heater to provide preheated water so they dont turn on or work less? i have been told that once an on-demand heater wants to come on with the minimum flow rate the heat sensor will cycle on and off, wearing it out with already 140 degree water... is there a fix if this is true? what if i cheated the heater to have 80 degree water instead of 140-160 available? it would have to heat less, but like itd have a regular work load..
2 plumbers have 2 different answers. i just think their experience doesnt know and mainly my question isnt answered very solid.
i think i get it now...
if flow rate is higher, the burner adjusts to use more gas to heat faster.
and the dang burner just comes on regardless of water temp because its a flow rate switch...
and a set point is how the heater knows how much to heat the water within its flow rate so it can actually save some gas there like RancidCrab's boiler circulation setup.
so if i feed a on-demand 140F h20, its going to be heated even more. yikes!
but what if i make the set point high?
id have to so the flame would be minimum...
still, its a cost.
this was great help you guys. i think i will keep them separated and find a mixing valve to sense the gravity hot tank going cold so it can switch the water to the rinnai...i have been at looking those mostly.
i used to have a french brand (forgot name) many years ago, and i just always ran it full on, no cold mix at all..it was either on, or it was off..went to solar then. i need just alittle more hot water in the winter to wash everything. ty again!
Actually, the instant water heaters that I've encountered come on and heat as soon as and as long as there's flow going through them. When the flow stops they stop. Doesn't make any difference what temp the water going through is, it's whatever the unit is supposed to put out at the exit end.
The tank lining is cracked and does need replaced, however (espcially since I don't use the water heater) can't I just get the cold water storage tank removed and pipe direct from the mains???
Expect advice appreciated, as the plumbers I spoke seemed more intent on earning lots of money than giving good advice....
'expert' I mean not 'expect'
The tank is in the cupboard so it's nice and easy to work with, and not much of a problem to remove.
I've heard of relatives who have gotten rid of their storage tank when they got central heating (however I'm not getting central heating).
The shower is already mains fed so I feel the other ones might as well be too. Someone said that the original tank was put in because they didn't use/trust one-way valves back then and there was a risk of contamination, if the water ever got back into the mains system.
I see what you mean about the hot water tank having to be low pressure, and yes that could be a reason to renew rather than possibly get rid of the tank and fit a one-way valve. It would be better if it could handle high pressure though, perhaps with a new valve leading to it.
I'm going to speak to another plumber in the next couple of days so it'll be interesting to hear what he says.
You cant plumb the hot water cylinder to the mains unless you change it for a purpose made unvented stainless steel type, and this would require a 22mm feed from the mains, the water currently feeding the bathroom from the cold water storage cistern is balancing the hot and cold water, wont make a difference to the shower, but is easier to control the tap connected type of shower head or mixing valve type, the other thing this system does is reduce the condensation on the toilet cistern, because the stored water is nearer to room Temperature.
It is good practice to chlorine clean the system when you change the cws cistern, and to fit a bye law 30 kit to it.

Vacuum relief valve? - DIY Chatroom - DIY Home Improvement Forum
If the vent line is blocked when the tank is draining, it will cause a vacuum that can damage the tank. I would like to install a valve on the vent line to allow emergency vacuum relief, but low pressure water still needs to flow freely in both directions past the vacuum relief valve without any leakage. I'm unable to add a valve directly to the tank and it needs to be installed on the vent line. What differentiated the project was that it was being done with the assistance of the municipality, which would assess a homeowner as to whether or not they were reliable customers. Following initial assessment, the municipality would also be involved in the revenue collection process, and this would no longer be a separate process between suppliers and homeowners.
